What is a "big fryer"?
A large fryer is a fryer with a large capacity that is ideal for preparing larger quantities of chips, snacks or other fried foods. These pans are suitable for families of 5 to 6 people or more are similar to those used in the catering industry. The term "large fryer" is often used for fryers with a capacity of 5 liters or more. This includes household models as well as professional catering fryers.
Large capacity fryers
The capacity ranges from about 6 to 15 liters, which makes it possible to fry 1.5 kg of fries or more in one go. There are also double fryers with two separate pans of, say, 2 x 6 liters, which is convenient for preparing fries and snacks at the same time.

Higher wattage
Large fryers often have a higher wattage (say, 3000 watts or more). This ensures that the oil comes to temperature quickly and holds the temperature well when you add cold ingredients. This results in crispier and less greasy fries.
Cold zone
Many large fryers are equipped with a"cold zone. This is an area under the heating element where the temperature is lower. Leftovers and crumbs sink to the bottom and don't burn there, keeping the oil cleaner longer and reducing the need to change it.
