For frying oil balls, a deep fryer with some specific features is best suited. This ensures that you get the best results: airy, cooked oil balls that are not too greasy. A powerful, spacious fryer with an accurate thermostat and a cold zone is the best choice for frying delicious oil balls.
Choose a pan with a generous capacity, preferably 3 liters or more. A larger pan can hold more oil, keeping the temperature more stable when frying several balls at once. For larger families or if you are baking for the whole neighborhood, a fryer of 5 liters or more or even a double fryer is a good option. You can then fry more oil balls at the same time without the temperature dropping too far.
A high wattage is crucial. A fryer with an output of 2,500 watts or more heats the oil faster and maintains the temperature better when you put in the cold batter. This prevents the oil from cooling down too much, leading to greasy, limp oil balls.
An accurate and adjustable thermostat is essential. The ideal temperature for frying oil balls is around 180 °C. Some recipes recommend heating the oil to 190 °C first, as the temperature drops as soon as you add the cold batter. That way, the temperature ends up at the perfect 180 °C. A good thermostat ensures that the oil stays at this temperature constantly, which guarantees even cooking.
Many modern deep fryers have a cold zone under the heating element. This is a great advantage because any crumbs or leftover oil balls will sink to the bottom and not burn there. This keeps the oil cleaner longer and prevents a bitter taste or unwanted odor.
